Get baking!

Spa treatments, shopping, going to the cinema... a who, what, when?
A new epidemic is sweetenin' up the nation. So get your apron and spoons to the ready because this year it's all about baking! And let me tell you, there is nothing more satisfying than the gorgeous aroma of chocolate cake filling the house.. ahh, bliss!

I've already got stuck in and have found some quick, easy and heavenly recipes for you to give a try!
So invite all of your friends over for a baking bonanza. Gordon Ramsay, here we come!!!

This week I've got an absolutely fantastic recipe. It's delicious! Fail-safe and scrumptious.

Carrot Cake


Ingredients 
  • 2509g white self-raising flour
  • 1 tsp baking powder
  • 1tsp cinnamon, nutmeg and ginger
  • 250g brown sugar
  • 250g carrots, peeled and grated
  • 3 large eggs, lightly beaten
  • 200ml sunflower oil
  • 150g cream cheese
  • 4 tbsp softened butter
  • 1tsp vanilla extract (optional)
  • 180g icing sugar
Recipe

Preheat the oven to 180C. Sift the flour and baking powder into a bowl. Then stir in the spices, sugar and carrots. Add the eggs and oil and beat until mixed together. Pour the mixture into a tin and bake for 45 to 50 minutes until golden. Leave cake to cool.

For the icing beat the cream cheese and butter together. Then add the vanilla extract and icing sugar. Stir until smooth. Spread the icing over the cake... and then you're finished!

Now you can sit back and enjoy!!!
